For stuffed pepper soup

★Ingredients

1 lb ground beef (or turkey)

2 cloves garlic, minced

1 onion, diced

1 green bell pepper, diced

1 can (14.5 oz) diced tomatoes

1 red bell pepper, diced

1 cup cooked rice

4 cups beef broth

1 teaspoon Italian seasoning

Salt and pepper to taste

Shredded cheese and fresh parsley for garnish (optional)

★Instructions

In a large pot, brown the ground beef over medium heat until cooked through. Drain excess fat if needed.

Add diced onion and minced garlic to the pot. Cook until onions are translucent.

Stir in diced bell peppers and cook for another 2-3 minutes.

Add diced tomatoes (with their juices), beef broth, Italian seasoning, salt, and pepper to the pot. Bring to a simmer.

Let the soup simmer for about 20-25 minutes to allow flavors to meld together.

Stir in cooked rice and simmer for an additional 5 minutes.

Taste and adjust seasoning if needed.

Serve hot, garnished with shredded cheese and fresh parsley if desired.
