Butter Pecan Snowball Cookies

★Ingredients

1 cup (2 sticks) unsalted butter, softened

1/2 cup powdered sugar, plus extra for coating

1 teaspoon vanilla extract

1 cup chopped pecans

2 cups all-purpose flour

★Instructions

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add in the vanilla extract and mix until well combined.

Gradually add the flour to the butter mixture, mixing until a dough forms. Stir in the chopped pecans until evenly distributed throughout the dough.

Bake in the preheated oven for 12-15 minutes, or until the bottoms of the cookies are lightly golden brown.

Shape the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 1 inch apart.

Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes. While still warm, roll the cookies in powdered sugar to coat them completely.

Once the cookies are completely cooled, roll them in powdered sugar once more for a snowy finish.

Store the Butter Pecan Snowball Cookies in an airtight container at room temperature for up to one week.
