Lombardy beef

★Ingredients

2 lbs beef (sirloin or tenderloin), thinly sliced

2 tablespoons olive oil

1 onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 can (14 oz) diced tomatoes

1 green bell pepper, sliced

1/2 cup beef broth

1/2 cup red wine

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

★Instructions

Heat olive oil in a large skillet over medium heat. Add onions and garlic, sauté until softened.

Add the sliced beef to the skillet and cook until browned on all sides. Remove beef from skillet and set aside.

In the same skillet, add the sliced bell peppers and cook until slightly softened.

Return the beef to the skillet. Add diced tomatoes, beef broth, red wine, oregano, basil, salt, and pepper. Stir to combine.

Bring the mixture to a simmer, then reduce heat to low and let it cook for about 20-25 minutes, or until the sauce has thickened and the beef is tender.

Adjust seasoning if necessary.

Serve hot, optionally with pasta or crusty bread.
