Baked feta and artichokes with gremolata olives

★Ingredients

1 block of feta cheese (about 200g)

1 can (14 oz) artichoke hearts, drained and quartered

1 lemon, sliced thinly

3 cloves garlic, minced

1/4 cup olive oil

1 teaspoon dried oregano

1 cup mixed olives (green and Kalamata work well), pitted and roughly chopped

Salt and pepper to taste

Zest of 1 lemon

1 clove garlic, minced

1/4 cup fresh parsley, finely chopped

2 tablespoons olive oil

Salt and pepper to taste

★Instructions


Preheat your oven to 400°F (200°C)

    • Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the feta is soft and starting to turn golden and the artichokes are heated through.

    While the feta and artichokes are baking, prepare the gremolata olives.

    In a bowl, combine the chopped olives, lemon zest, minced garlic, chopped parsley, and olive oil.

    Mix well and season with salt and pepper to taste.

    • Once the feta and artichokes are done baking, remove the dish from the oven.
    • Spoon the gremolata olives over the top of the baked feta and artichokes.
    • Serve warm with crusty bread or crackers.
