1 ½ pounds ground beef (80% lean)

1 cup breadcrumbs

1 medium onion, finely chopped

2 cloves garlic, minced

1 large egg

1 tablespoon Worcestershire sauce

¾ cup milk

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon dried thyme

½ teaspoon dried oregano

½ cup ketchup

2 tablespoons brown sugar

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C).
  2. Prepare Meatloaf:
    In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, milk, Worcestershire sauce, salt, pepper, thyme, and oregano. Mix until all ingredients are just combined, being careful not to overmix as it can make the meatloaf dense.
  3. Shape and Place in Pan:
    Transfer the meat mixture to a loaf pan (9×5 inches) and shape it into a loaf. Alternatively, you can shape the meatloaf by hand and place it on a lined baking sheet.
  4. Make the Glaze:
    In a small bowl, whisk together the ketchup, brown sugar, Dijon mustard, and apple cider vinegar until smooth.
  5. Apply the Glaze:
    Spread about half of the glaze mixture evenly over the top of the meatloaf.
  6. Bake:
    Bake the meatloaf in the preheated oven for about 45-55 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Add More Glaze:
    About 10 minutes before the meatloaf is done, remove it from the oven and spread the remaining glaze on top. Return it to the oven for the final 10 minutes.
  8. Rest and Serve:
    Once cooked, let the meatloaf rest for 10 minutes before slicing. This helps the juices redistribute throughout the meatloaf, keeping it moist.
