- Mix Wet Ingredients: In another bowl, combine the applesauce, eggs, crushed pineapple (with juice), and vanilla extract. Mix well.
- Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. If using nuts, gently fold them into the batter.
- Bake: Pour the batter into the prepared loaf pan. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the bread to cool in the pan for about 10 minutes, then remove it from the pan and let it cool completely on a wire rack.
