For the Cookie Layers:
1/2 cup of melted butter
2 cups of graham cracker crumbs (or any other crushed cookies like Oreos or digestive biscuits)
For the Cream Filling:
2 cups of heavy cream
1/2 cup of powdered sugar
1 teaspoon of vanilla extract
8 oz (1 package) of cream cheese, softened
For the Chocolate Ganache:
- 1 cup of semi-sweet chocolate chips
- 1/2 cup of heavy cream
For the Toppings:
- 1/2 cup of crushed cookies
- 1/2 cup of mini chocolate chips or chocolate shavings

★Instructions
- Prepare the Cookie Layers:
- In a medium bowl, mix the graham cracker crumbs with the melted butter until well combined.
- Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Place in the refrigerator to set while you prepare the other layers.
- Make the Cream Filling:
- In a large mixing bowl, beat the heavy cream until stiff peaks form. Set aside.
- In another bowl, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract, and mix until well combined.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Assemble the Cake:
- Spread half of the cream filling over the chilled cookie crust.
- Sprinkle a layer of crushed cookies over the cream filling.
- Add the remaining cream filling on top and spread evenly.
- Place the cake in the refrigerator to set for at least 2 hours.
- Prepare the Chocolate Ganache:
- Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer.
- Pour the hot cream over the chocolate chips in a heatproof bowl. Let sit for 2-3 minutes, then stir until smooth.
- Allow the ganache to cool slightly before pouring over the cake.
- Decorate the Cake:
- Pour the cooled ganache over the set cream layer and spread it out evenly.
- Sprinkle with mini chocolate chips or chocolate shavings and any remaining crushed cookies.
- Optionally, top with fresh berries.
- Chill and Serve:
- Chill the cake for at least 1 hour before serving to allow the ganache to set.
