No-Bake Cookie Cake Extravaganza

★Ingredients

For the Cookie Layers:

1/2 cup of melted butter

2 cups of graham cracker crumbs (or any other crushed cookies like Oreos or digestive biscuits)

For the Cream Filling:

2 cups of heavy cream

1/2 cup of powdered sugar

1 teaspoon of vanilla extract

8 oz (1 package) of cream cheese, softened

For the Chocolate Ganache:

  • 1 cup of semi-sweet chocolate chips
  • 1/2 cup of heavy cream

  1. Prepare the Cookie Layers:
  • In a medium bowl, mix the graham cracker crumbs with the melted butter until well combined.
  • Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Place in the refrigerator to set while you prepare the other layers.
  1. Make the Cream Filling:
  • In a large mixing bowl, beat the heavy cream until stiff peaks form. Set aside.
  • In another bowl, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract, and mix until well combined.
  • Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  1. Assemble the Cake:
  • Spread half of the cream filling over the chilled cookie crust.
  • Sprinkle a layer of crushed cookies over the cream filling.
  • Add the remaining cream filling on top and spread evenly.
  • Place the cake in the refrigerator to set for at least 2 hours.
  1. Prepare the Chocolate Ganache:
  • Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer.
  • Pour the hot cream over the chocolate chips in a heatproof bowl. Let sit for 2-3 minutes, then stir until smooth.
  • Allow the ganache to cool slightly before pouring over the cake.
  1. Decorate the Cake:
  • Pour the cooled ganache over the set cream layer and spread it out evenly.
  • Sprinkle with mini chocolate chips or chocolate shavings and any remaining crushed cookies.
  • Optionally, top with fresh berries.
  1. Chill and Serve:
  • Chill the cake for at least 1 hour before serving to allow the ganache to set.
  • Remove the springform pan sides, slice, and enjoy your No-Bake Cookie Cake Extravaganza!
