- Preheat Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan. - Mix Dry Ingredients:
In a medium bowl, whisk together the flour and baking powder. Set aside. - Cream Butter and Sugar:
In a large bowl, use an electric mixer to cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes. - Add Eggs and Extracts:
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and almond extract (if using). - Combine with Dry Ingredients:
Gradually add the flour mixture to the butter mixture, alternating with the sour cream, beginning and ending with the flour mixture. Mix until just combined. - Fold in Cranberries and Nuts:
Gently fold in the cranberries and nuts (if using) with a spatula. - Bake the Cake:
Spread the batter evenly into the prepared baking pan. Bake in the preheated oven for 35-45 minutes, or until a toothpick inserted into the center comes out clean. - Cool the Cake:
Let the cake cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. - Prepare the Glaze:
In a small bowl, whisk together the powdered sugar, milk or cream, and vanilla extract until smooth. - Glaze the Cake:
Drizzle the glaze over the cooled cake. Allow the glaze to set before serving.
