Cranberry Christmas Cake Recipe

★Ingredients

For the Cake:

2 cups all-purpose flour

1 ½ cups granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon almond extract (optional)

¾ cup unsalted butter, softened

1 teaspoon baking powder

1 cup sour cream

2 cups fresh cranberries (you can also use frozen cranberries, thawed and drained)

½ cup chopped nuts (optional, pecans or walnuts work well)

For the Glaze:

1 cup powdered sugar

2 tablespoons milk or heavy cream

1 teaspoon vanilla extract

★Instructions

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Mix Dry Ingredients:
    In a medium bowl, whisk together the flour and baking powder. Set aside.
  3. Cream Butter and Sugar:
    In a large bowl, use an electric mixer to cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  4. Add Eggs and Extracts:
    Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and almond extract (if using).
  5. Combine with Dry Ingredients:
    Gradually add the flour mixture to the butter mixture, alternating with the sour cream, beginning and ending with the flour mixture. Mix until just combined.
  6. Fold in Cranberries and Nuts:
    Gently fold in the cranberries and nuts (if using) with a spatula.
  7. Bake the Cake:
    Spread the batter evenly into the prepared baking pan. Bake in the preheated oven for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the Cake:
    Let the cake cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  9. Prepare the Glaze:
    In a small bowl, whisk together the powdered sugar, milk or cream, and vanilla extract until smooth.
  10. Glaze the Cake:
    Drizzle the glaze over the cooled cake. Allow the glaze to set before serving.

  • Ensure the butter is at room temperature to achieve the best creaming results.
  • You can adjust the amount of cranberries based on your preference for tartness.
  • For a festive touch, sprinkle some powdered sugar on top just before serving.
