Key lime pie cake

★Ingredients

For the Cake:

1 1/2 cups granulated sugar

1/2 cup unsalted butter, softened

1/2 cup vegetable oil

4 large eggs

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

2 3/4 cups all-purpose flour

1/2 teaspoon salt

1 cup buttermilk

1/4 cup fresh key lime juice

1 tablespoon key lime zest

1 teaspoon vanilla extract

For the Key Lime Filling:

  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup key lime juice
  • 4 large egg yolks
  • 1 tablespoon key lime zest

For the Whipped Cream Frosting:

2 cups heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

★Instructions

For the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a large bowl, beat the sugar, butter, and oil together until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Add the dry ingredients to the butter mixture alternately with the buttermilk, beginning and ending with the dry ingredients. Mix just until combined.
  6. Stir in the key lime juice, zest, and vanilla extract.
  7. Divide the batter evenly among the prepared pans and smooth the tops.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

For the Key Lime Filling:

  1. In a medium bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, and zest until well combined.
  2. Pour the mixture into a saucepan and cook over medium heat, stirring constantly, until thickened, about 8-10 minutes.
  3. Remove from heat and let cool completely before using.

For the Whipped Cream Frosting:

  1. In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract together until stiff peaks form.

Assembly:

  1. Place one cake layer on a serving plate. Spread half of the key lime filling over the cake layer.
  2. Top with the second cake layer and spread the remaining key lime filling over the second layer.
  3. Top with the third cake layer.
  4. Frost the top and sides of the cake with the whipped cream frosting.
  5. Garnish with extra lime zest or slices of key lime if desired.
