For the Cake:
1 1/2 cups granulated sugar
1/2 cup unsalted butter, softened
1/2 cup vegetable oil
4 large eggs
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
2 3/4 cups all-purpose flour

1 cup buttermilk
1/4 cup fresh key lime juice
1 tablespoon key lime zest
1 teaspoon vanilla extract
For the Key Lime Filling:
- 1 (14 oz) can sweetened condensed milk
- 1/2 cup key lime juice
- 4 large egg yolks
- 1 tablespoon key lime zest
For the Whipped Cream Frosting:
2 cups heavy whipping cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
★Instructions
For the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a large bowl, beat the sugar, butter, and oil together until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the butter mixture alternately with the buttermilk, beginning and ending with the dry ingredients. Mix just until combined.
- Stir in the key lime juice, zest, and vanilla extract.
- Divide the batter evenly among the prepared pans and smooth the tops.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
For the Key Lime Filling:
- In a medium bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, and zest until well combined.
- Pour the mixture into a saucepan and cook over medium heat, stirring constantly, until thickened, about 8-10 minutes.
- Remove from heat and let cool completely before using.
For the Whipped Cream Frosting:
- In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract together until stiff peaks form.
Assembly:
- Place one cake layer on a serving plate. Spread half of the key lime filling over the cake layer.
- Top with the second cake layer and spread the remaining key lime filling over the second layer.
- Top with the third cake layer.
- Frost the top and sides of the cake with the whipped cream frosting.
- Garnish with extra lime zest or slices of key lime if desired.
