★Instructions
- Preheat your oven to 400°F (200°C) and grease an 8-inch square baking pan.
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, oil (or melted butter), and eggs until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the chopped pecans.
- Pour the batter into the prepared baking pan and spread it out evenly.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for a few minutes before slicing.
Pecan Recipe:
For additional toasted pecans to sprinkle on top (optional):
- 1 cup whole pecans
- 1 tablespoon butter
- 1 tablespoon brown sugar
Instructions:
- In a skillet over medium heat, melt the butter.
- Add the pecans and brown sugar.
- Stir constantly until the pecans are toasted and coated with the sugar mixture (about 5-7 minutes).
- Remove from heat and let cool.
Apple Sauce Recipe:
Ingredients:
- 4 large apples (peeled, cored, and chopped)
- 1/2 cup water
- 1/4 cup granulated sugar (adjust to taste)
- 1/2 teaspoon ground cinnamon
Instructions:
- In a medium saucepan, combine the apples, water, sugar, and cinnamon.
- Cook over medium heat until the apples are soft and tender (about 15-20 minutes).
- Mash the apples with a fork or potato masher to your desired consistency (smooth or chunky).
- Let it cool to room temperature before serving.
Serving:
- Cut the cornbread into squares and place on serving plates.
- Top with a generous spoonful of apple sauce.
- Sprinkle additional toasted pecans on top (if using).
