Buttery Pecan Snowball Cookies

★Ingredients

1 cup unsalted butter, softened

1 teaspoon vanilla extract

2 1/4 cups all-purpose flour

1/2 cup powdered sugar

1/4 teaspoon salt

1 cup finely chopped pecans

Additional powdered sugar for rolling (about 1 cup)

  1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  1. Cream the Butter and Sugar:
  • In a large mixing bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy. This usually takes about 3-4 minutes.
  1. Add Vanilla:
  • Mix in the vanilla extract until well combined.
  1. Combine Dry Ingredients:
  • In a separate bowl, whisk together the flour and salt. Gradually add this to the butter mixture, mixing just until combined.
  1. Add Pecans:
  • Stir in the finely chopped pecans until evenly distributed throughout the dough.
  1. Shape the Cookies:
  • Roll the dough into 1-inch balls and place them on the prepared baking sheet about 1 inch apart.
  1. Bake:
  • Bake in the preheated oven for 12-15 minutes, or until the bottoms are lightly golden. The tops of the cookies should not brown.
  1. First Coating:
  • Allow the cookies to cool on the baking sheet for about 5 minutes, then roll each warm cookie in powdered sugar. Place them on a wire rack to cool completely.

  • Once the cookies are completely cooled, roll them in powdered sugar again to ensure they are fully coated.
