1 cup (150g) pitted dates, chopped
1 cup (240ml) hot brewed coffee
1 tsp baking soda
1 ½ cups (190g) all-purpose flour
1 tsp baking powder
½ tsp ground cinnamon

½ cup (115g) unsalted butter, at room temperature
¾ cup (150g) granulated sugar
2 large eggs
1 tsp vanilla extract
For the glaze:
1 cup (120g) powdered sugar
2 tbsp brewed coffee, cooled
½ tsp vanilla extract

★Instructions
- Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×5-inch loaf pan, or line it with parchment paper.
- Prepare Dates:
- Place the chopped dates in a bowl and pour the hot coffee over them. Let them soak for about 15 minutes.
- Dry Ingredients:
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Cream Butter and Sugar:
- In a large mixing bowl, cream the butter and granulated sugar together until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Combine Ingredients:
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Stir in the soaked dates and coffee mixture until well incorporated.
- Bake:
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- Glaze:
- In a small bowl, whisk together the powdered sugar, coffee, and vanilla extract until smooth.
- Drizzle the glaze over the cooled cake.
- Serve:
- Allow the glaze to set for a few minutes before slicing and serving.
