Broccoli Apple Salad

★Ingredients

4 cups broccoli florets, chopped into bite-sized pieces

1 large apple, cored and diced (Granny Smith or Honeycrisp work well)

1/2 cup dried cranberries

1/4 cup sunflower seeds or sliced almonds

1/2 cup red onion, finely chopped

1/2 cup cooked bacon, crumbled (optional)

1/2 cup shredded cheddar cheese (optional)

Meat broth with frozen vegetables

Irresistible date coffee loaf cake

Dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • Salt and pepper to taste

★Instructions

  1. Prepare the Salad Ingredients:
  • In a large bowl, combine the broccoli florets, diced apple, chopped red onion, dried cranberries, sunflower seeds, and cooked bacon if using.
  1. Make the Dressing:
  • In a small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, salt, and pepper until well combined.
  1. Combine and Toss:
  • Pour the dressing over the broccoli mixture and toss until everything is well coated.
  1. Chill and Serve:
  • Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
