Creamy Beef Taco Soup

★Ingredients

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning mix

1 (10 oz) can diced tomatoes with green chilies (such as Rotel)

1 (15 oz) can corn, drained

1 (4 oz) can chopped green chilies

4 cups beef broth

1 (15 oz) can black beans, drained and rinsed

1 (8 oz) package cream cheese, softened and cubed

1 cup heavy cream

Salt and pepper, to taste

Shredded cheese, for garnish

Fresh cilantro, chopped, for garnish

Tortilla chips, for serving

★Instructions

  1. Cook the Ground Beef:
  • In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat.
  1. Add Aromatics:
  • Add the diced onion and minced garlic to the pot. Cook until the onion is translucent, about 3-4 minutes.
  1. Season the Meat:
  • Stir in the taco seasoning mix until the meat is well coated.
  1. Add the Vegetables and Broth:
  • Add the diced tomatoes with green chilies, corn, black beans, chopped green chilies, and beef broth. Stir to combine.
  1. Simmer:
  • Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes to allow the flavors to meld.
  1. Make it Creamy:
  • Stir in the softened cream cheese until fully melted and incorporated. Then add the heavy cream, stirring to combine. Let the soup heat through, but do not bring it back to a boil.
  1. Season:
  • Taste the soup and season with salt and pepper as needed.
  1. Serve:
  • Ladle the soup into bowls and garnish with shredded cheese and chopped cilantro. Serve with tortilla chips on the side.
