Making the Wontons:
- Prepare the Filling: In a bowl, combine the ground pork, chopped shrimp, green onions, ginger, garlic, soy sauce, sesame oil, rice wine, salt, and white pepper. Mix well.
- Fill the Wontons: Place a wonton wrapper in the palm of your hand. Add about a teaspoon of filling in the center. Wet the edges with water, fold the wrapper in half to form a triangle, and press the edges to seal. Bring the two opposite corners of the triangle together and press to seal. Repeat with the remaining wrappers and filling.
Making the Soup:
- Prepare the Broth: In a large pot, bring the chicken broth to a boil. Add the sliced ginger and reduce to a simmer for about 5 minutes to infuse the flavor.
- Cook the Wontons: Carefully add the wontons to the broth. Let them cook for about 5-7 minutes, until they float to the top and the filling is cooked through.
- Add Vegetables: Add the chopped bok choy and let it cook for another 2-3 minutes until tender.
- Season: Stir in the soy sauce and sesame oil. Taste and adjust seasoning with salt and white pepper.
- Serve: Ladle the soup into bowls, making sure each bowl gets a generous number of wontons. Garnish with sliced green onions and serve hot.
