Cheesy Baked Potato Rounds

★Ingredients

4 large russet potatoes, washed and sliced into 1/4 inch rounds

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1/2 cup cooked bacon, crumbled (optional)

1/2 cup sour cream

1 1/2 cups shredded cheddar cheese

2 green onions, chopped

★Instructions

  1. Preheat the Oven:
  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or lightly grease it.
  1. Prepare the Potatoes:
  • In a large bowl, toss the potato slices with olive oil, garlic powder, onion powder, paprika, salt, and pepper until evenly coated.
  1. Bake the Potatoes:
  • Arrange the potato slices in a single layer on the prepared baking sheet.
  • Bake for about 20 minutes, flip the slices, and bake for an additional 15-20 minutes, or until the potatoes are golden brown and tender.
  1. Add the Cheese and Bacon:
  • Remove the potatoes from the oven and sprinkle the shredded cheddar cheese evenly over each slice.
  • If using, sprinkle the crumbled bacon over the cheese.
  • Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  1. Serve:
  • Transfer the cheesy potato rounds to a serving platter.
  • Top with a dollop of sour cream and sprinkle with chopped green onions.
  • Serve immediately.
