★Instructions
- Prepare the Chicken: Finely chop the chicken breasts. You can use a knife or a food processor for a finer texture.
- Mix Ingredients: In a large mixing bowl, combine the chopped chicken, shredded mozzarella cheese, mayonnaise, flour, eggs, parsley (if using), garlic powder, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
- Form the Fritters: Heat vegetable oil in a large non-stick skillet over medium heat. Once the oil is hot, scoop about 2 tablespoons of the chicken mixture and drop it into the skillet, flattening it slightly with the back of the spoon to form a fritter. Repeat with the remaining mixture, making sure not to overcrowd the skillet.
- Cook the Fritters: Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and cooked through. You may need to cook them in batches depending on the size of your skillet.
- Drain and Serve: Remove the fritters from the skillet and drain on paper towels to remove excess oil. Serve warm with your favorite dipping sauce.
Tips:
- For extra flavor, you can add a handful of finely chopped green onions or some diced red bell pepper to the mixture.
- Serve with a side salad, steamed vegetables, or inside a sandwich for a complete meal.
- These fritters can also be baked in the oven at 375°F (190°C) for about 20-25 minutes if you prefer a healthier version.
