CHEESY CHICKEN FRITTERS

★Ingredients

1 lb (450g) chicken breasts, finely chopped

1 cup shredded mozzarella cheese

1/3 cup mayonnaise

1/3 cup all-purpose flour

2 tablespoons chopped fresh parsley (optional)

1/2 teaspoon garlic powder

2 large eggs

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons vegetable oil (for frying)

★Instructions

  1. Prepare the Chicken: Finely chop the chicken breasts. You can use a knife or a food processor for a finer texture.
  2. Mix Ingredients: In a large mixing bowl, combine the chopped chicken, shredded mozzarella cheese, mayonnaise, flour, eggs, parsley (if using), garlic powder, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
  3. Form the Fritters: Heat vegetable oil in a large non-stick skillet over medium heat. Once the oil is hot, scoop about 2 tablespoons of the chicken mixture and drop it into the skillet, flattening it slightly with the back of the spoon to form a fritter. Repeat with the remaining mixture, making sure not to overcrowd the skillet.
  4. Cook the Fritters: Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and cooked through. You may need to cook them in batches depending on the size of your skillet.
  5. Drain and Serve: Remove the fritters from the skillet and drain on paper towels to remove excess oil. Serve warm with your favorite dipping sauce.

Tips:

  • For extra flavor, you can add a handful of finely chopped green onions or some diced red bell pepper to the mixture.
  • Serve with a side salad, steamed vegetables, or inside a sandwich for a complete meal.
  • These fritters can also be baked in the oven at 375°F (190°C) for about 20-25 minutes if you prefer a healthier version.
