Fluffy rolls out of potatoes

★Ingredients

2 medium-sized potatoes (about 1 pound)

1/2 cup warm water (110°F to 115°F)

2 1/4 teaspoons active dry yeast (1 packet)

1/2 cup unsalted butter, melted and cooled slightly

2 large eggs, lightly beaten

1/2 cup sugar

1 1/2 teaspoons salt

4 to 5 cups all-purpose flour

★Instructions

  1. Prepare the Potatoes:
  • Peel and cut the potatoes into chunks.
  • Boil the potatoes in a pot of water until tender, about 15 minutes.
  • Drain and mash the potatoes until smooth. You should have about 1 cup of mashed potatoes. Let cool slightly.
  1. Activate the Yeast:
  • In a small bowl, combine the warm water and a pinch of sugar.
  • Sprinkle the yeast over the water and let it sit for about 5-10 minutes until foamy.
  1. Make the Dough:
  • In a large mixing bowl, combine the mashed potatoes, sugar, melted butter, eggs, and salt.
  • Add the activated yeast mixture and mix well.
  • Gradually add the flour, one cup at a time, mixing until a soft dough forms. The dough should be slightly sticky but manageable.
  1. Knead the Dough:
  • Turn the dough out onto a lightly floured surface.
  • Knead for about 5-7 minutes, adding more flour as necessary to prevent sticking, until the dough is smooth and elastic.
  1. First Rise:
  • Place the dough in a lightly greased bowl, turning to coat all sides.
  • Cover with a clean towel or plastic wrap and let rise in a warm, draft-free place for about 1 to 1.5 hours, or until doubled in size.
  1. Shape the Rolls:
  • Punch down the dough to release the air.
  • Divide the dough into 16-20 equal pieces, depending on the size of rolls you prefer.
  • Shape each piece into a smooth ball and place on a greased baking sheet or in a greased baking dish, leaving a little space between each roll.
  1. Second Rise:
  • Cover the rolls with a clean towel and let rise for another 30-45 minutes, or until they are puffy and doubled in size.
  1. Bake the Rolls:
  • Preheat the oven to 375°F (190°C).
  • Bake the rolls for 15-20 minutes, or until golden brown on top.
  • Brush the hot rolls with melted butter for a soft and flavorful crust.
  1. Serve:
  • Allow the rolls to cool slightly before serving. They are best enjoyed warm.

Tips:

  • For extra flavor, you can add herbs or garlic powder to the dough.
  • These rolls freeze well. After baking and cooling, store them in an airtight container in the freezer. Reheat in the oven when ready to serve.
