Galettes de carotes croutes

★Ingredients

4 large carrots, peeled and grated

1 small onion, finely chopped

2 eggs, beaten

1/2 cup (60g) all-purpose flour

2 garlic cloves, minced

1/4 cup (30g) grated Parmesan cheese

1/4 teaspoon ground cumin

Salt and pepper to taste

2 tablespoons chopped fresh parsley

Olive oil for frying

★Instructions

  1. Prepare the Carrots:
  • Peel and grate the carrots using a box grater or a food processor.
  1. Mix the Ingredients:
  • In a large bowl, combine the grated carrots, chopped onion, minced garlic, beaten eggs, flour, grated Parmesan cheese, ground cumin, salt, pepper, and chopped parsley. Mix well until all the ingredients are thoroughly combined.
  1. Form the Galettes:
  • Take a handful of the mixture and shape it into a small patty or galette. Repeat until all the mixture is used.
  1. Heat the Oil:
  • In a large skillet, heat a few tablespoons of olive oil over medium heat.
  1. Cook the Galettes:
  • Place the galettes in the skillet and cook for about 3-4 minutes on each side, or until they are golden brown and crispy. You may need to do this in batches to avoid overcrowding the skillet.
  1. Drain and Serve:
  • Once cooked, transfer the galettes to a plate lined with paper towels to drain any excess oil.
  • Serve the crispy carrot galettes warm, garnished with additional parsley if desired.
