★Ingredients

For the Dough:

2 1/4 teaspoons active dry yeast

3/4 cup warm milk (110°F or 45°C)

1/4 cup granulated sugar

1/4 cup warm water (110°F or 45°C)

2 tablespoons unsalted butter, melted

1 teaspoon salt

1 teaspoon vanilla extract

2 large eggs

3 1/2 to 4 cups all-purpose flour

For Frying:

  • Vegetable oil (for frying)

For Filling:

  • 1 cup fruit jelly or jam (your choice)

For Coating:

  • 1 cup granulated sugar

  1. Activate the Yeast:
  • In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until it becomes frothy.
  1. Prepare the Dough:
  • In a large mixing bowl, combine the warm milk, sugar, melted butter, salt, and vanilla extract. Add the eggs and mix well.
  • Add the activated yeast mixture to the bowl.
  • Gradually add the flour, one cup at a time, mixing until the dough comes together and is smooth and elastic. You may not need all the flour.
  1. Knead the Dough:
  • Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
  1. Shape the Donuts:
  • Punch down the risen dough and roll it out on a floured surface to about 1/2-inch thickness.
  • Use a round cookie cutter (about 2-3 inches in diameter) to cut out circles of dough.
  • Place the dough circles on a baking sheet lined with parchment paper. Cover with a kitchen towel and let them rise for about 30 minutes until puffy.
  1. Fry the Donuts:
  • In a deep fryer or a large heavy-bottomed pot, heat the vegetable oil to 350°F (175°C).
  • Carefully fry the dough circles in batches, a few at a time, until golden brown on both sides, about 1-2 minutes per side. Use a slotted spoon to transfer the fried donuts to a paper towel-lined tray to drain excess oil.
