★Ingredients

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted butter or vegetable oil

1/2 cup chopped vegetables (bell peppers, spinach, scallions, etc.)

1/4 cup cooked bacon or ham (optional)

1/2 cup grated cheese (cheddar or your choice)

Fresh herbs (like chives or parsley) for garnish

Cooking oil or butter for the pan

  1. Prepare the Batter:
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, mix the milk, egg, and melted butter or oil.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix.
  1. Add the Fillings:
  • Fold in the grated cheese, chopped vegetables, and cooked bacon or ham if using.
  1. Cook the Pancakes:
  • Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking oil or butter.
  • Pour about 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  • Flip and cook for another 1-2 minutes, until golden brown and cooked through.
