★Instructions
- Prepare the Batter:
- In a large bowl, whisk together the flour, baking powder, and salt.
- In another bowl, mix the milk, egg, and melted butter or oil.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix.
- Add the Fillings:
- Fold in the grated cheese, chopped vegetables, and cooked bacon or ham if using.
- Cook the Pancakes:
- Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking oil or butter.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip and cook for another 1-2 minutes, until golden brown and cooked through.
