★Ingredients
2 cups cooked chicken, shredded or finely chopped
1/4 cup grated Parmesan cheese
1/2 cup breadcrumbs
1/4 cup finely chopped onion
1/4 cup finely chopped celery
1/4 cup finely chopped bell pepper (optional)
1/4 cup mayonnaise
1 egg
1 tsp garlic powder
1 tsp onion powder
1 tsp dried parsley
Salt and pepper to taste
2 tbsp olive oil or vegetable oil (for frying)
★Instructions
- Prepare the Chicken Mix:
- In a large bowl, combine the shredded chicken, breadcrumbs, Parmesan cheese, chopped onion, celery, and bell pepper (if using).
- Add the mayonnaise, egg, garlic powder, onion powder, dried parsley, salt, and pepper. Mix well until all ingredients are evenly combined.
- Shape the Patties:
- Divide the mixture into equal portions and shape them into patties. You can make them as big or small as you like.
- Cook the Patties:
- Heat the olive oil in a large skillet over medium heat.
- Once the oil is hot, add the chicken patties. Cook for about 4-5 minutes on each side, or until they are golden brown and crispy.
- Serve:
- Remove the patties from the skillet and place them on a plate lined with paper towels to drain any excess oil.
- Serve the chicken patties hot with your favorite dipping sauce or as part of a sandwich or burger.
Tips:
- If the mixture is too dry and not holding together, add a little more mayonnaise.
- If it’s too wet, add more breadcrumbs.
- For a healthier version, you can bake the patties in a preheated oven at 375°F (190°C) for about 20 minutes, flipping halfway through.
Enjoy!
