Quick and Easy Vegetable Pancakes Recipe

★Ingredients

2 cups mixed vegetables (grated zucchini, carrots, bell peppers, etc.)

1 small onion, finely chopped

1/2 cup all-purpose flour

2 eggs

1/2 teaspoon baking powder

Salt and pepper to taste

1/4 teaspoon garlic powder (optional)

1/4 teaspoon paprika (optional)

Olive oil or vegetable oil for frying

★Instructions

  1. Prepare the Vegetables:
  • Grate or finely chop the vegetables and onion. If using watery vegetables like zucchini, squeeze out excess moisture using a clean kitchen towel.
  1. Mix the Batter:
  • In a large bowl, combine the grated vegetables and chopped onion.
  • Add the eggs, flour, baking powder, salt, pepper, garlic powder, and paprika. Mix until well combined. The batter should be slightly thick; if it’s too watery, add a bit more flour.
  1. Heat the Pan:
  • Heat a non-stick skillet or frying pan over medium heat. Add a tablespoon of oil and let it get hot.
  1. Cook the Pancakes:
  • Spoon the batter into the pan, flattening it slightly with the back of the spoon to form small pancakes.
  • Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  1. Serve:
  • Remove from the pan and place on a paper towel-lined plate to drain any excess oil.
  • Serve hot with your favorite dipping sauce or a dollop of sour cream.
