★Ingredients
2 cups fresh plums, pitted and chopped
1 cup granulated sugar
1/2 cup unsalted butter, softened
1 1/2 cups all-purpose flour
2 large eggs
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup buttermilk (or milk with 1/2 tsp lemon juice)
1 tsp ground cinnamon
1/2 tsp ground nutmeg
Powdered sugar for dusting (optional)
★Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- Prepare the Plums: Wash, pit, and chop the plums. Set them aside.
- Cream Butter and Sugar: In a large bowl, cream the butter and granulated sugar together until light and fluffy.
- Add Eggs and Vanilla: Beat in the eggs, one at a time, then add the vanilla extract.
- Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Fold in Plums: Gently fold in the chopped plums.
- Bake: Pour the batter into the prepared cake pan and spread it out evenly. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Dust with powdered sugar if desired before serving.
Enjoy!
