Cucumber and Bell Pepper Sesame Salad

★Ingredients

1 large cucumber, thinly sliced

1 yellow bell pepper, thinly sliced

1 red bell pepper, thinly sliced

2 tablespoons sesame seeds, toasted

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon honey or agave syrup

1 clove garlic, minced

1 teaspoon grated fresh ginger

2 green onions, thinly sliced

Fresh cilantro, for garnish (optional)

Salt and pepper, to taste

★Instructions

  1. Prepare Vegetables:
  • Thinly slice the cucumber and bell peppers and place them in a large bowl.
  1. Toast Sesame Seeds:
  • In a dry skillet over medium heat, toast the sesame seeds until they are golden brown and fragrant. This should take about 2-3 minutes. Stir frequently to prevent burning.
  1. Make the Dressing:
  • In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey (or agave syrup), minced garlic, and grated ginger.
  1. Combine Salad:
  • Pour the dressing over the cucumber and bell pepper slices. Add the toasted sesame seeds and green onions, and toss everything together until well combined.
  1. Season and Serve:
  • Season with salt and pepper to taste. Garnish with fresh cilantro if desired.
  • Serve immediately or refrigerate for about 15-30 minutes to let the flavors meld together.
