Lime Slab Pie Recipe

★Ingredients

Crust:

3 cups all-purpose flour

1 cup (2 sticks) unsalted butter, cold and cubed

1 cup powdered sugar

1/2 teaspoon salt

Filling:

  • 2 cups granulated sugar
  • 6 tablespoons all-purpose flour
  • 6 large eggs
  • 1 cup freshly squeezed lime juice (about 8 limes)
  • 1 tablespoon lime zest
  • 1/2 teaspoon baking powder
  • Green food coloring (optional)

Topping:

  • Powdered sugar, for dusting
  • Whipped cream (optional)
  • Lime slices, for garnish (optional)

★Instructions

  1. Preheat Oven and Prepare Pan:
  • Preheat the oven to 350°F (175°C).
  • Line a 9×13-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  1. Make the Crust:
  • In a large bowl, combine the flour, powdered sugar, and salt.
  • Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Press the mixture evenly into the bottom of the prepared baking pan.
  • Bake the crust for 20-25 minutes, or until lightly golden brown.
  1. Prepare the Filling:
  • While the crust is baking, whisk together the granulated sugar, flour, and baking powder in a large bowl.
  • Add the eggs one at a time, whisking until smooth after each addition.
  • Stir in the lime juice and lime zest.
  • If desired, add a few drops of green food coloring to enhance the lime color.
  1. Bake the Pie:
  • Pour the lime filling over the hot crust.
  • Return to the oven and bake for 20-25 minutes, or until the filling is set and no longer jiggles in the center.
  1. Cool and Serve:
  • Allow the pie to cool completely in the pan on a wire rack.
  • Once cooled, use the parchment paper overhang to lift the pie out of the pan.
  • Dust with powdered sugar before cutting into squares.
  • Serve with whipped cream and lime slices if desired.
