Crust:
3 cups all-purpose flour
1 cup (2 sticks) unsalted butter, cold and cubed
1 cup powdered sugar
1/2 teaspoon salt
Filling:
- 2 cups granulated sugar
- 6 tablespoons all-purpose flour
- 6 large eggs
- 1 cup freshly squeezed lime juice (about 8 limes)
- 1 tablespoon lime zest
- 1/2 teaspoon baking powder
- Green food coloring (optional)
Topping:
- Powdered sugar, for dusting
- Whipped cream (optional)
- Lime slices, for garnish (optional)
★Instructions
- Preheat Oven and Prepare Pan:
- Preheat the oven to 350°F (175°C).
- Line a 9×13-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
- Make the Crust:
- In a large bowl, combine the flour, powdered sugar, and salt.
- Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Press the mixture evenly into the bottom of the prepared baking pan.
- Bake the crust for 20-25 minutes, or until lightly golden brown.
- Prepare the Filling:
- While the crust is baking, whisk together the granulated sugar, flour, and baking powder in a large bowl.
- Add the eggs one at a time, whisking until smooth after each addition.
- Stir in the lime juice and lime zest.
- If desired, add a few drops of green food coloring to enhance the lime color.
- Bake the Pie:
- Pour the lime filling over the hot crust.
- Return to the oven and bake for 20-25 minutes, or until the filling is set and no longer jiggles in the center.
- Cool and Serve:
- Allow the pie to cool completely in the pan on a wire rack.
- Once cooled, use the parchment paper overhang to lift the pie out of the pan.
- Dust with powdered sugar before cutting into squares.
- Serve with whipped cream and lime slices if desired.
