Long John Silver’s Batter

★Ingredients

2 tablespoons cornstarch

1 teaspoon baking powder

3/4 cup all-purpose flour

1 teaspoon salt

1/4 teaspoon paprika

1/4 teaspoon onion powder

1/4 teaspoon garlic powder

1 cup club soda (chilled)

★Instructions

  1. Prepare the Dry Ingredients: In a medium bowl, combine the flour, cornstarch, baking powder, salt, paprika, onion powder, and garlic powder.
  2. Add the Wet Ingredients: Gradually add the club soda to the dry mixture, whisking until smooth. The batter should be slightly thick but still runny.
  3. Prepare the Oil: Heat oil in a deep fryer or a large skillet to 375°F (190°C).
  4. Batter the Fish: Dip fish fillets (like cod or haddock) into the batter, ensuring they are fully coated.
  5. Fry the Fish: Carefully place the battered fish into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side. Be sure not to overcrowd the fryer or skillet.
  6. Drain and Serve: Remove the fish from the oil and place on paper towels to drain excess oil. Serve immediately with your favorite sides and condiments.
