Veggie Filled Mini Pizzas

★Ingredients

For the dough:

2 cups all-purpose flour

1 teaspoon salt

1 tablespoon olive oil

1 teaspoon sugar

1 packet (2 1/4 teaspoons) active dry yeast

3/4 cup warm water

For the toppings:

1/2 cup pizza sauce

1 cup shredded mozzarella cheese

1/2 cup sliced bell peppers (any color)

1/2 cup sliced mushrooms

1/2 cup chopped spinach

1/4 cup sliced red onion

1/4 cup sliced black olives

1/4 cup cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

★Instructions

  1. Prepare the Dough:
  • In a small bowl, dissolve the yeast in warm water. Let it sit for about 5 minutes until it becomes frothy.
  • In a large bowl, combine the flour, sugar, and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.
  • Knead the dough on a floured surface for about 5-7 minutes until it is smooth and elastic. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  1. Preheat the Oven:
  • Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while it preheats.
  1. Prepare the Toppings:
  • While the dough is rising, prepare all the vegetable toppings. Slice and chop them as needed.
  1. Shape the Dough:
  • Punch down the risen dough and divide it into 8-10 equal pieces. Roll each piece into a small ball.
  • On a floured surface, roll each ball into a small circle, about 4-5 inches in diameter.
