CHEESY CHICKEN MEATBALLS

★Ingredients

1 lb ground chicken

1/2 cup grated Parmesan cheese

1 cup mozzarella cheese

1/2 cup breadcrumbs

1 large egg

2 cloves garlic, minced

1/4 cup finely chopped parsley

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon Italian seasoning

Olive oil for cooking

★Instructions

  1. Preheat Oven:
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Mix Ingredients:
    In a large bowl, combine the ground chicken, mozzarella cheese, Parmesan cheese, breadcrumbs, egg, minced garlic, chopped parsley, salt, pepper, and Italian seasoning. Mix until all ingredients are well incorporated.
  3. Form Meatballs:
    Using your hands or a small ice cream scoop, form the mixture into 1 to 1.5-inch meatballs and place them on the prepared baking sheet.
  4. Cook Meatballs:
    Drizzle a little olive oil over the meatballs to help them brown. Bake in the preheated oven for 20-25 minutes, or until the meatballs are golden brown and cooked through (internal temperature should reach 165°F or 74°C).
  5. Serve:
    Serve the cheesy chicken meatballs hot with your favorite dipping sauce, pasta, or in a sub sandwich.
