Banana Egg Cakes

★Ingredients

2 large eggs

2 ripe bananas

1/4 teaspoon ground cinnamon (optional)

1/2 teaspoon vanilla extract (optional)

Butter or oil for cooking

★Instructions

  1. Mash the Bananas: In a mixing bowl, mash the ripe bananas with a fork until smooth.
  2. Add Eggs: Crack the eggs into the bowl with the mashed bananas and whisk until well combined. If using, add vanilla extract and ground cinnamon, and mix well.
  3. Heat the Pan: Place a non-stick skillet or frying pan over medium heat and add a small amount of butter or oil to coat the surface.
  4. Cook the Cakes: Pour spoonfuls of the banana-egg mixture into the pan to form small cakes. Cook for about 1-2 minutes on each side, or until golden brown and set in the middle. Flip carefully with a spatula.
  5. Serve: Remove from the pan and serve warm. These cakes can be enjoyed plain or with toppings like fresh fruit, honey, or yogurt.
