Beignets of broccoli and fromage

★Ingredients

For the Beignet Batter:

1/2 cup grated Parmesan cheese

1/2 cup shredded cheddar cheese

1 cup all-purpose flour

2 tsp baking powder

1/2 tsp salt

1/4 tsp black pepper

1/2 cup milk

1 large egg

2 tbsp melted butter

For the Broccoli Filling:

1 cup finely chopped broccoli florets (steamed and cooled)

1/4 cup finely chopped onion

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Salt and pepper to taste

For Frying:

Vegetable oil (for deep frying)

★Instructions

  1. Prepare the Broccoli Filling:
  • In a bowl, mix the chopped broccoli, onion, mozzarella cheese, and Parmesan cheese. Season with salt and pepper. Set aside.
  1. Make the Beignet Batter:
  • In a large bowl, whisk together the flour, Parmesan cheese, cheddar cheese, baking powder, salt, and black pepper.
  • In another bowl, whisk the milk, egg, and melted butter.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  1. Incorporate the Broccoli Filling:
  • Gently fold the broccoli mixture into the batter until evenly distributed.
  1. Heat the Oil:
  • In a deep fryer or a heavy-bottomed pot, heat vegetable oil to 350°F (175°C). Ensure there’s enough oil to submerge the beignets.
  1. Fry the Beignets:
  • Using a spoon or a small ice cream scoop, drop spoonfuls of the batter into the hot oil. Fry in batches, being careful not to overcrowd the pot.
  • Fry for 2-3 minutes per side, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  1. Serve:
  • Serve the beignets warm. They can be enjoyed as a snack, appetizer, or side dish.
