2 slices of your favorite bread (sourdough or whole grain work great)
1 ripe avocado, sliced
1 medium tomato, sliced
2 tablespoons butter, softened
4 oz (about 1 cup) mozzarella cheese, shredded or sliced
Salt and pepper to taste
Optional: fresh basil leaves or a sprinkle of dried oregano

★Instructions
- Prepare the Ingredients:
- Slice the avocado and tomato.
- Shred or slice the mozzarella cheese.
- Assemble the Sandwich:
- Butter one side of each slice of bread.
- Place one slice of bread, buttered side down, in a skillet or on a griddle.
- Layer half of the mozzarella cheese on the bread.
- Add the avocado slices on top of the cheese.
- Place the tomato slices on top of the avocado.
- Sprinkle with a little salt and pepper.
- Add the remaining mozzarella cheese on top of the tomatoes.
- Top with the second slice of bread, buttered side up.
- Grill the Sandwich:
- Heat the skillet or griddle over medium heat.
- Place the sandwich in the skillet and cook until the bottom slice of bread is golden brown and the cheese begins to melt, about 3-4 minutes.
- Carefully flip the sandwich and cook until the other side is golden brown and the cheese is fully melted, another 3-4 minutes. Adjust the heat as needed to ensure the bread toasts evenly without burning.
- Serve:
- Remove the sandwich from the skillet and let it cool for a minute.
- Slice in half and serve immediately, optionally with a side of your favorite soup or a fresh salad.
