Grilled cheese with avocado, mozzarella and tomatoes

★Ingredients

2 slices of your favorite bread (sourdough or whole grain work great)

1 ripe avocado, sliced

1 medium tomato, sliced

2 tablespoons butter, softened

4 oz (about 1 cup) mozzarella cheese, shredded or sliced

Salt and pepper to taste

Optional: fresh basil leaves or a sprinkle of dried oregano

★Instructions

  1. Prepare the Ingredients:
    • Slice the avocado and tomato.
    • Shred or slice the mozzarella cheese.
  2. Assemble the Sandwich:
    • Butter one side of each slice of bread.
    • Place one slice of bread, buttered side down, in a skillet or on a griddle.
    • Layer half of the mozzarella cheese on the bread.
    • Add the avocado slices on top of the cheese.
    • Place the tomato slices on top of the avocado.
    • Sprinkle with a little salt and pepper.
    • Add the remaining mozzarella cheese on top of the tomatoes.
    • Top with the second slice of bread, buttered side up.
  3. Grill the Sandwich:
    • Heat the skillet or griddle over medium heat.
    • Place the sandwich in the skillet and cook until the bottom slice of bread is golden brown and the cheese begins to melt, about 3-4 minutes.
    • Carefully flip the sandwich and cook until the other side is golden brown and the cheese is fully melted, another 3-4 minutes. Adjust the heat as needed to ensure the bread toasts evenly without burning.
  4. Serve:
    • Remove the sandwich from the skillet and let it cool for a minute.
    • Slice in half and serve immediately, optionally with a side of your favorite soup or a fresh salad.
