Vegetarian tofu and mushrooms with Florentine cheese

★Ingredients

1 block firm tofu, drained and pressed

2 cloves garlic, minced

8 ounces mushrooms, sliced

1/2 cup grated Florentine cheese (such as Parmesan or Pecorino Romano)

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

★Instructions

Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or non-stick spray.

Slice the tofu into cubes or rectangles and place them in the baking dish.

In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.

Add sliced mushrooms to the skillet and cook until they release their moisture and become tender, about 5-7 minutes. Season with salt and pepper to taste.

Spread the cooked mushrooms evenly over the tofu in the baking dish.

Sprinkle grated Florentine cheese over the tofu and mushrooms.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
