Cornbread dressing, pecans and apples

★Ingredients

1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup granulated sugar

1 cup milk

1/4 cup vegetable oil (or melted butter)

2 large eggs

1 cup chopped pecans

★Instructions

  1. Preheat your oven to 400°F (200°C) and grease an 8-inch square baking pan.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix the milk, oil (or melted butter), and eggs until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chopped pecans.
  6. Pour the batter into the prepared baking pan and spread it out evenly.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let it cool in the pan for a few minutes before slicing.

Pecan Recipe:

For additional toasted pecans to sprinkle on top (optional):

  • 1 cup whole pecans
  • 1 tablespoon butter
  • 1 tablespoon brown sugar

Instructions:

  1. In a skillet over medium heat, melt the butter.
  2. Add the pecans and brown sugar.
  3. Stir constantly until the pecans are toasted and coated with the sugar mixture (about 5-7 minutes).
  4. Remove from heat and let cool.

Apple Sauce Recipe:

Ingredients:

  • 4 large apples (peeled, cored, and chopped)
  • 1/2 cup water
  • 1/4 cup granulated sugar (adjust to taste)
  • 1/2 teaspoon ground cinnamon

Instructions:

  1. In a medium saucepan, combine the apples, water, sugar, and cinnamon.
  2. Cook over medium heat until the apples are soft and tender (about 15-20 minutes).
  3. Mash the apples with a fork or potato masher to your desired consistency (smooth or chunky).
  4. Let it cool to room temperature before serving.

Serving:

  • Cut the cornbread into squares and place on serving plates.
  • Top with a generous spoonful of apple sauce.
  • Sprinkle additional toasted pecans on top (if using).
