★Ingredients

2 to 3 ripe bananas, mashed

1/3 cup melted butter

1 teaspoon baking soda

3/4 cup sugar (you can adjust to 1 cup if you prefer it sweeter)

1 large egg, beaten

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

★Instructions

  1. Preheat the oven to 350°F (175°C), and butter a 4×8 inch loaf pan.
  2. Mash the bananas in a mixing bowl using a fork until smooth.
  3. Stir in the melted butter into the mashed bananas.
  4. Mix in the baking soda and salt.
  5. Add the sugar, beaten egg, and vanilla extract. Mix until well combined.
  6. Add the flour and stir until the batter is just mixed. Do not overmix.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 60 to 65 minutes at 350°F (175°C), or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let the bread cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Tips for Extra Moist Banana Bread:

  • Use very ripe bananas. The riper, the better, as they will be sweeter and more flavorful.
