Irresistible date coffee loaf cake

★Ingredients

For the cake:

1 cup (150g) pitted dates, chopped

1 cup (240ml) hot brewed coffee

1 tsp baking soda

1 ½ cups (190g) all-purpose flour

1 tsp baking powder

½ tsp ground cinnamon

¼ tsp ground nutmeg

¼ tsp salt

½ cup (115g) unsalted butter, at room temperature

¾ cup (150g) granulated sugar

2 large eggs

1 tsp vanilla extract

For the glaze:

1 cup (120g) powdered sugar

2 tbsp brewed coffee, cooled

½ tsp vanilla extract

★Instructions

  1. Preheat and Prepare:
  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9×5-inch loaf pan, or line it with parchment paper.
  1. Prepare Dates:
  • Place the chopped dates in a bowl and pour the hot coffee over them. Let them soak for about 15 minutes.
  1. Dry Ingredients:
  • In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  1. Cream Butter and Sugar:
  • In a large mixing bowl, cream the butter and granulated sugar together until light and fluffy.
  • Beat in the eggs one at a time, followed by the vanilla extract.
  1. Combine Ingredients:
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Stir in the soaked dates and coffee mixture until well incorporated.
  1. Bake:
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  1. Glaze:
  • In a small bowl, whisk together the powdered sugar, coffee, and vanilla extract until smooth.
  • Drizzle the glaze over the cooled cake.
  1. Serve:
  • Allow the glaze to set for a few minutes before slicing and serving.
