Luxury log yule recipe with dried berries and chocolate ganache

★Ingredients

4 large eggs

3/4 cup granulated sugar

1 teaspoon vanilla extract

1/2 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1 teaspoon baking powder

Pinch of salt

1 cup heavy cream

8 ounces semisweet chocolate, chopped

1/2 cup dried cranberries

Powdered sugar, for dusting

★Instructions

Preheat your oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper, leaving an overhang on the long sides.

In a large bowl, beat the eggs and granulated sugar until thick and pale. Stir in the vanilla extract.

In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined.

Pour the batter into the prepared pan and spread it out evenly. Bake for 12-15 minutes, or until the cake springs back when lightly touched.

While the cake is baking, heat the heavy cream in a small saucepan until it just begins to simmer. Remove from heat and add the chopped chocolate. Let it sit for a minute, then stir until smooth to make the ganache.

Once the cake is baked, immediately turn it out onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper.

Starting from one of the short ends, gently roll the cake up with the towel. Let it cool completely.

Unroll the cooled cake and spread the chocolate ganache evenly over the surface. Sprinkle the dried cranberries over the ganache.

Carefully roll the cake back up, this time without the towel. Place it seam side down on a serving platter.
