1 pound ground beef
1 small onion, chopped
1 can (10 oz) enchilada sauce
1 red bell pepper, chopped
1 can (15 oz) corn, drained
1 can (15 oz) black beans, drained and rinsed
1 packet taco seasoning
2 cups shredded cheddar cheese
1 bag (32 oz) frozen tater tots
Optional toppings: sour cream, green onions, cilantro, diced tomatoes, jalapeños

★Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Cook Beef and Vegetables:
- In a large skillet, cook the ground beef over medium-high heat until browned. Drain any excess fat.
- Add the chopped onion and red bell pepper to the skillet and cook until softened, about 5 minutes.
- Add Seasonings and Sauces:
- Stir in the enchilada sauce, black beans, corn, and taco seasoning.
- Simmer for a few minutes until the mixture is well combined and heated through.
- Assemble the Casserole:
- Spread the beef and vegetable mixture evenly in a 9×13 inch baking dish.
- Sprinkle 1 cup of the shredded cheddar cheese over the mixture.
- Arrange the tater tots in a single layer on top of the cheese.
- Bake:
- Bake in the preheated oven for about 25-30 minutes, or until the tater tots are golden brown and crispy.
- Add More Cheese:
- Remove the casserole from the oven and sprinkle the remaining 1 cup of shredded cheddar cheese over the top.
- Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove from the oven and let cool for a few minutes.
- Serve with your choice of optional toppings like sour cream, green onions, cilantro, diced tomatoes, and jalapeños.
