Mexican taco lasagna

★Ingredients

  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 onion, diced
  • 1 can diced tomatoes, drained
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 8-10 flour tortillas
  • 1 cup salsa
  • 2 cups shredded Mexican cheese blend
  • Optional toppings: sour cream, diced tomatoes, sliced olives, chopped cilantro

★Instructions

Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.

In a skillet, cook the ground beef or turkey and onion over medium heat until the meat is browned and the onion is softened. Drain any excess grease.

Add the taco seasoning, diced tomatoes, black beans, corn, and salsa to the skillet. Stir well to combine and simmer for 5-7 minutes.

Layer the bottom of the baking dish with tortillas, cutting them if needed to fit. Spread half of the meat mixture over the tortillas, then sprinkle with half of the shredded cheese. Repeat the layers with the remaining tortillas, meat mixture, and cheese.

Cover the dish with foil and bake for 25 minutes. Then remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and lightly browned.
