★Instructions
- Prepare the Potatoes:
- Peel and cut the potatoes into chunks.
- Boil the potatoes in a pot of water until tender, about 15 minutes.
- Drain and mash the potatoes until smooth. You should have about 1 cup of mashed potatoes. Let cool slightly.
- Activate the Yeast:
- In a small bowl, combine the warm water and a pinch of sugar.
- Sprinkle the yeast over the water and let it sit for about 5-10 minutes until foamy.
- Make the Dough:
- In a large mixing bowl, combine the mashed potatoes, sugar, melted butter, eggs, and salt.
- Add the activated yeast mixture and mix well.
- Gradually add the flour, one cup at a time, mixing until a soft dough forms. The dough should be slightly sticky but manageable.
- Knead the Dough:
- Turn the dough out onto a lightly floured surface.
- Knead for about 5-7 minutes, adding more flour as necessary to prevent sticking, until the dough is smooth and elastic.
- First Rise:
- Place the dough in a lightly greased bowl, turning to coat all sides.
- Cover with a clean towel or plastic wrap and let rise in a warm, draft-free place for about 1 to 1.5 hours, or until doubled in size.
- Shape the Rolls:
- Punch down the dough to release the air.
- Divide the dough into 16-20 equal pieces, depending on the size of rolls you prefer.
- Shape each piece into a smooth ball and place on a greased baking sheet or in a greased baking dish, leaving a little space between each roll.
- Second Rise:
- Cover the rolls with a clean towel and let rise for another 30-45 minutes, or until they are puffy and doubled in size.
- Bake the Rolls:
- Preheat the oven to 375°F (190°C).
- Bake the rolls for 15-20 minutes, or until golden brown on top.
- Brush the hot rolls with melted butter for a soft and flavorful crust.
- Serve:
- Allow the rolls to cool slightly before serving. They are best enjoyed warm.
