8 cups day-old bread, cubed (such as white or French bread)
2 cups finely chopped onion
2 cups finely chopped celery
1 cup unsalted butter
4 cups chicken broth (more if needed)
2 teaspoons dried sage
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
3 large eggs, beaten

★Instructions
Cornbread:
- Preheat Oven: Preheat your oven to 425°F (220°C).
- Mix Dry Ingredients: In a large bowl, mix together the cornmeal, flour, baking powder, baking soda, and salt.
- Mix Wet Ingredients: In another bowl, whisk together the buttermilk, eggs, and vegetable oil.
- Combine: Pour the wet ingredients into the dry ingredients and stir until just combined.
- Bake: Pour the batter into a greased 9-inch cast-iron skillet or baking dish. Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean. Let cool.
Dressing:
- Prep Bread: Crumble the cooled cornbread into a large bowl. Add the cubed day-old bread.
- Sauté Veggies: In a large skillet, melt the butter over medium heat. Add the chopped onion and celery. Sauté until softened, about 10 minutes.
- Combine Ingredients: Add the sautéed vegetables to the bowl with the bread. Stir in the sage, thyme, salt, and pepper. Mix well.
- Add Broth: Gradually add the chicken broth, stirring until the mixture is moistened but not too wet. You might need more or less broth depending on the bread.
- Add Eggs: Stir in the beaten eggs until well combined.
- Bake: Preheat your oven to 350°F (175°C). Transfer the mixture to a greased baking dish. Bake for 45-55 minutes, or until the top is golden brown and the dressing is cooked through.
Tips:
- For extra flavor, you can add cooked and crumbled sausage, chopped cooked chicken, or oysters.
- Adjust the seasonings according to your taste preference.
- If you prefer a more moist dressing, add more broth.
