2 medium potatoes, peeled and grated
1 small onion, finely chopped
2 medium zucchinis, grated
2 cloves garlic, minced
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 egg, beaten
Salt and pepper to taste
Olive oil for frying
★Instructions
- Prepare the vegetables: Grate the zucchinis and potatoes using a box grater. Place them in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.
- Combine ingredients: In a large bowl, combine the grated zucchinis, potatoes, chopped onion, minced garlic, breadcrumbs, Parmesan cheese, parsley, beaten egg, salt, and pepper. Mix well until everything is evenly combined.
- Form patties: Take a portion of the mixture and shape it into a patty about 1/2 inch thick. Repeat with the remaining mixture.
- Cook patties: Heat a couple of tablespoons of olive oil in a large skillet over medium heat. Add the patties to the skillet (in batches if necessary) and cook for about 4-5 minutes per side, or until they are golden brown and crispy.
- Serve: Once cooked, transfer the patties to a plate lined with paper towels to drain excess oil. Serve hot as a side dish or a light main course. Optionally, serve with sour cream or yogurt sauce.
