Vanilla Walnut Cake with Creamy Filling

For the Cake

2 1/2 cups all-purpose flour

2 1/2 teaspoons baking powder

1 cup unsalted butter, at room temperature

2 cups granulated sugar

1/2 teaspoon salt

4 large eggs

1 teaspoon vanilla extract

1 cup whole milk

1 cup chopped walnuts

For the Creamy Filling

1/2 cup unsalted butter, at room temperature

1/2 cup heavy cream

1 1/2 cups powdered sugar

1 teaspoon vanilla extract

Making the Cake

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar: In a large mixing bowl, beat the butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add Eggs and Vanilla: Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Combine Wet and Dry Ingredients: Add the flour mixture to the butter mixture alternately with the milk, beginning and ending with the flour mixture. Beat until just combined.
  6. Fold in Walnuts: Gently fold in the chopped walnuts.
  7. Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

Making the Creamy Filling

  1. Beat Butter: In a medium bowl, beat the butter until creamy.
  2. Add Powdered Sugar: Gradually add the powdered sugar, beating until smooth.
  3. Add Cream and Vanilla: Beat in the heavy cream and vanilla extract until the filling is light and fluffy.

Assembling the Cake

  1. Level the Cakes: If necessary, level the tops of the cakes with a serrated knife to make them flat.
  2. Add the Filling: Place one cake layer on a serving plate. Spread the creamy filling evenly over the top.
