Upside pineapple fudge

★Ingredients

2 cups white chocolate chips

1/2 cup crushed pineapple, well-drained

1/2 cup maraschino cherries, chopped

1 can (14 oz) sweetened condensed milk

1/2 cup unsalted butter

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup brown sugar

1/4 cup heavy cream

★Instructions

  1. Prepare the Pan:
  • Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal.
  1. Create the Pineapple Base:
  • In a small saucepan, melt the butter over medium heat.
  • Add the brown sugar and heavy cream, stirring until the mixture is smooth and the sugar has dissolved.
  • Spread this mixture evenly over the bottom of the prepared baking dish.
  • Evenly distribute the crushed pineapple and chopped maraschino cherries over the sugar mixture.
  1. Make the Fudge:
  • In a medium saucepan, combine the white chocolate chips and sweetened condensed milk.
  • Cook over low heat, stirring constantly, until the chocolate is melted and the mixture is smooth.
  • Remove from heat and stir in the salt and vanilla extract.
  1. Combine and Set:
  • Pour the fudge mixture over the pineapple and cherry layer, spreading it evenly.
  • Let the fudge cool to room temperature, then refrigerate for at least 2 hours or until firm.
  1. Serve:
  • Once set, use the parchment paper overhang to lift the fudge out of the pan.
  • Cut into squares and serve.
