Sliced Baked Potatoes

★Ingredients

4 large potatoes

Salt and pepper to taste

2-3 tablespoons of olive oil

2-3 cloves of garlic, minced (optional)

Fresh herbs like rosemary or thyme (optional)

1/4 cup grated Parmesan cheese (optional)

1/4 cup melted butter (optional)

★Instructions

  1. Preheat the oven:
Preheat your oven to 425°F (220°C).
  2. Prepare the potatoes:
Wash the potatoes thoroughly. You can peel them if you prefer, but leaving the skins on adds extra flavor and nutrients. Slice the potatoes thinly, about 1/4 inch thick, but do not cut all the way through. You can place the potato between two wooden spoons to help avoid cutting all the way through.
  3. Season the potatoes:
Place the potatoes on a baking sheet lined with parchment paper or lightly greased. Carefully fan out the slices and drizzle olive oil over each potato. Make sure the oil gets between the slices. Season with salt, pepper, and minced garlic if using.
  4. Add herbs and cheese (optional):
If you are using fresh herbs, sprinkle them over the potatoes. For a cheesy version, sprinkle grated Parmesan cheese over the top.
  5. Bake:
Place the baking sheet in the preheated oven and bake for 45-60 minutes, or until the potatoes are tender and the edges are crispy. The exact time will depend on the size of your potatoes and the thickness of the slices.
  6. Finish with butter (optional):
If using melted butter, brush it over the potatoes during the last 10 minutes of baking.
  7. Serve:
Once the potatoes are done, remove them from the oven and let them cool for a few minutes before serving. They can be garnished with more herbs or a sprinkle of cheese if desired.

Enjoy!
