★Ingredients
2 cups mixed vegetables (grated zucchini, carrots, bell peppers, etc.)
1 small onion, finely chopped
1/2 cup all-purpose flour
2 eggs
1/2 teaspoon baking powder
Salt and pepper to taste
1/4 teaspoon garlic powder (optional)
1/4 teaspoon paprika (optional)
Olive oil or vegetable oil for frying
★Instructions
- Prepare the Vegetables:
- Grate or finely chop the vegetables and onion. If using watery vegetables like zucchini, squeeze out excess moisture using a clean kitchen towel.
- Mix the Batter:
- In a large bowl, combine the grated vegetables and chopped onion.
- Add the eggs, flour, baking powder, salt, pepper, garlic powder, and paprika. Mix until well combined. The batter should be slightly thick; if it’s too watery, add a bit more flour.
- Heat the Pan:
- Heat a non-stick skillet or frying pan over medium heat. Add a tablespoon of oil and let it get hot.
- Cook the Pancakes:
- Spoon the batter into the pan, flattening it slightly with the back of the spoon to form small pancakes.
- Cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Serve:
- Remove from the pan and place on a paper towel-lined plate to drain any excess oil.
- Serve hot with your favorite dipping sauce or a dollop of sour cream.
Enjoy!
