4 chicken thighs (bone-in, skin-on)
2 tablespoons olive oil
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Optional: 2 cloves garlic, minced
★Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C).
- Prepare Chicken:
- Pat the chicken thighs dry with paper towels. This will help achieve a crispy skin.
- Season the chicken thighs on both sides with salt, pepper, garlic powder, onion powder, and paprika.
- Sear Chicken:
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Place the chicken thighs skin-side down in the skillet. Sear for about 5-7 minutes until the skin is golden brown and crispy. Do not move the chicken during this time to ensure a good sear.
- Roast Chicken:
- If using minced garlic, add it to the skillet around the chicken thighs.
- Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
- Rest and Serve:
- Remove the skillet from the oven and let the chicken rest for 5 minutes.
- Garnish with freshly chopped parsley before serving.
