Creamy Baked Broccoli with Tomatoes and Kale

★Ingredients

1 large head of broccoli, cut into florets

2 cups kale, chopped (stems removed)

1 cup heavy cream

2 cups cherry tomatoes, halved

1 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

★Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Vegetables:
  • Place the broccoli florets, cherry tomatoes, and chopped kale into a large mixing bowl.
  • Drizzle with olive oil, and add minced garlic, salt, pepper, oregano, basil, and red pepper flakes (if using). Toss to coat the vegetables evenly.
  1. Assemble the Dish:
  • Transfer the vegetable mixture to a large baking dish.
  • Pour the heavy cream evenly over the vegetables.
  • Sprinkle the Parmesan cheese over the top.
  1. Bake:
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  • After 20 minutes, remove the foil, sprinkle the shredded mozzarella cheese on top, and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.
  1. Serve:
  • Remove from the oven and let it cool for a few minutes before serving.
