Zucchini with oatmeal

★Ingredients

1 cup rolled oats

2 medium zucchinis, sliced

1/2 cup milk (or a dairy-free alternative)

1/4 cup grated Parmesan cheese (optional)

1 tablespoon olive oil

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh herbs (like basil or parsley) for garnish

★Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Zucchini: Heat olive oil in a skillet over medium heat. Add zucchini slices and cook until they start to soften, about 3-4 minutes.
  3. Mix Oatmeal: In a bowl, combine the rolled oats, milk, garlic powder, salt, and pepper. If using Parmesan cheese, mix it in as well.
  4. Combine Ingredients: Add the cooked zucchini to the bowl with the oatmeal mixture and stir to combine.
  5. Transfer to Baking Dish: Pour the mixture into a greased baking dish.
  6. Bake: Bake for about 20-25 minutes, or until the oatmeal is set and the top is slightly golden.
  7. Garnish and Serve: Let it cool slightly before serving. Garnish with fresh herbs if desired.
