Spinach Egg Casserole

★Ingredients

1 cup milk (whole, 2%, or your preferred type)

10 large eggs

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 cup fresh spinach, chopped

1/2 cup diced onion

1/2 cup diced bell pepper (any color)

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional)

1/4 teaspoon red pepper flakes (optional)

1 tablespoon olive oil or butter

★Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or a similar sized casserole dish.
  2. Cook Vegetables: In a large skillet, heat the olive oil or butter over medium heat. Add the diced onion and bell pepper and cook until they start to soften, about 5 minutes. Add the minced garlic and cook for another minute.
  3. Add Spinach: Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
  4. Prepare Egg Mixture: In a large mixing bowl, whisk together the eggs and milk. Stir in the shredded cheese, salt, black pepper, paprika, and red pepper flakes (if using).
  5. Combine Ingredients: Add the cooked vegetable mixture to the egg mixture and stir to combine.
  6. Pour into Dish: Pour the mixture into the prepared baking dish, spreading it out evenly.
  7. Bake: Bake in the preheated oven for 30-35 minutes, or until the casserole is set and a toothpick inserted into the center comes out clean. The top should be lightly golden.
  8. Cool and Serve: Let the casserole cool for a few minutes before slicing. Serve warm.
